Test Principle: Pyruvate decarboxylase (PDC) mainly exists in yeast and is one of the key enzymes in ethanol fermentation. PDC catalyzes pyruvate decarboxylate to acetaldehyde, which reacts under the action of ethanol dehydrogenase (ADH) , and catalyzes NADH to convert into NAD+. NADH has a characteristic absorption peak at 340 nm. The PDC activity can be calculated by measuring the OD value at 340 nm.
